Chocolate Chips Raisins Oats Cookies



Once I start, I couldn't stop! This recipe is so easy and so versatile that I just love to play with it. Help! So many combination and so many way to use this basic cookie dough to create whatever cookie you can think of (all sort of nuts, variety of chips, dried fruit, there is no limit!). And I haven't even started with cornflakes yet!!



I would also like to thanks Gina, the recipe originator for sharing this easy and yummy cookies in her forum. And thanks chawanmushi for posting it in her blog because I missed it at Gina's forum.




My variation of this recipe (for my record, also for people who like cup measurement):

(A)
1 egg, beaten
125ml canola oil
1/2 tsp. vanilla extract (optional)
1/4 cup + 1/8 cup of sugar

(B)
1 1/4 cup self-raising/rising flour
1/2 cup old fashioned oats
1/2 cup semi-sweet chocolate chips
1/2 cup raisins

Method:

1. Mix (A) in a bowl. Add in (B). Mix well.

2. Use your hands, roll and press into balls. Place on baking sheet lined with parchment paper.

3. Bake at preheated 350'F oven for 15 minutes. Or baked in preheated 325'F convection oven for 13 minutes.

4. Let cool in pan for 5 minutes before transferring it to cool completely on a wire rack. Store in air-tight container.

To me, this is a fool proof recipe, just mixed and baked and I don't see where it could go wrong with any non-baker.
