Steamed Pandan Cassava Kuih




I made this for a party and it was well received.  I was thinking instead of the baked cassava kuih that we were used to, I wanted to try a steam version.  The steamed version was not bad too and easy to make.  You can also make this with gula Melaka/ palm sugar for a different fragrant, color and taste instead of using pandan paste.








Ingredients:


1 packet/ 1 lb./ 16z./ 454gm of grated tapioca/ cassava
3/4 cup white sugar (or palm sugar for different taste and color)
4 Tbsp. tapioca flour
1 1/4 cup coconut milk
1 tsp. pandan paste


Method:


1.  Drain the cassava or squeeze dry.

2.  In a big bowl, add in all the ingredients, mix well and pour into a greased pan and steam for 25 minutes.

3.  Let cool before slicing into pieces.
